Banana Granola Cookies

One of the main questions I get from clients is how to cook and bake healthier. These cookies are a fresh take on that homemade banana bread that my mom baked when I was growing up. They are gluten, dairy free, vegan and best of all...low glycemic. Bake a batch of them and bring with as a healthy alternative to buying granola bar or energy bars, which are typically loaded with sugar and processed ingredients.

  • 2 large, ripe bananas, well mashed
  • 1 tsp pure vanilla extract
  • 1/4 cup coconut oil, softened (not completely melted)
  • 2 cups almond meal (ground almonds)
  • 1/3 cup coconut, finely shredded & unsweetened
  • 1 tsp cinnamon
  • 1/8 tsp sea salt
  • 1 teaspoon baking powder
  • 1/3 cup gluten free granola or goji berries
  • 1⁄2 cup pumpkin or sunflower seeds
  • 1/3 cup shredded coconut

Preheat oven to 350. Combine the bananas, vanilla, and coconut oil. Mix together the almond flour, shredded coconut, cinnamon, sea salt and baking powder. Combine the dry and wet ingredients. Fold in the granola or goji berries and seeds. Lightly oil a baking sheet with coconut oil. Drop spoonfuls of the batter onto the baking sheet. Bake for 12-15 minutes, until desired consistency.
